The name Pontalba denotes richness, as this dish is named for Baroness Micaela Almonester de Pontalba, a wealthy Parisian who in 1850 built the opulent Pontabla buildings that still stand at Jackson Square in the historic New Orleans French Quarter. This dish features a tender chicken breast with garlic, mushrooms, and green onions braised in white wine with fried potatoes finished with Béarnaise sauce.
